El Trapiche (Spanish for an old-fashioned sugar-press) has been recommended by the New York Times and is a favorite of Panamá Jack. This fantastic restaurant serves authentic Panamanian food in generous portions at very reasonable prices. Try the Corvina ala Criolla (Panamanian sea bass, lightly sautéed with Creole sauce), it is my fist choice. El Trapiche has an excellent home-made hot-sauce called ahi-chombo (picante) made from fresh Habanero peppers
It is centrally located in the El Cangrejo district of Panama City, its country decor and typical food make this a great place to get to know Panamá. Other favorites are: the delicious and hardy breakfasts, Corvina in Garlic Sauce, Hojalra Sandwiches and Tamal de Olla — a delicious baked cornmeal pudding with chicken, green olives and vegetables.
